The asparagus season has begun, now Germany's gourmets are getting their money's worth again. To ensure that all vitamins and minerals are preserved, the asparagus should only be boiled with a little water. This is what the consumer advice center in North Rhine-Westphalia advises.
White asparagus is traditionally prepared with ham, potatoes and butter. Green asparagus is one of the most popular vegetables in creative cuisine. The first asparagus peaks appear at a soil temperature of 12 degrees Celsius. Because asparagus contains a lot of water, it is easily digestible and contains few calories. In addition, the stick vegetables contain a lot of vitamins A, B, C and E as well as the minerals magnesium, potassium, iron, phosphorus, sodium and calcium.

Boil asparagus with a little water
It is best to cook asparagus with just a little water in a saucepan with the lid closed. According to the experts at the Consumer Advice Center in North Rhine-Westphalia, oval, flat pots should be used in which the asparagus is barely covered with water. Special asparagus pots also promise good results. The poles are in an upright position. Here, too, a small amount of liquid is sufficient to cook the exquisite vegetables with steam.

The cooking time of the white asparagus is between 15 and 25 minutes depending on the thickness. Green asparagus is usually a bit thinner and therefore only needs to be cooked for 10 to 15 minutes. White stick vegetables should be peeled starting slightly below the top. It is important to cut off the woody ends. With green asparagus, it is sufficient if only the lower third is peeled.

Test whether the asparagus is still fresh
Asparagus only tastes fresh. There should be no more than 24 hours between asparagus pricking and preparation. Consumers can check the freshness on the cut surface. This should be moist, smooth and smell of asparagus. If the ends are discolored, hollow or sunken, this could be an indication that the vegetables are no longer completely fresh. Another trick is rubbing the poles together. If the sticks are fresh, there is a squeaking sound. After a slight pressing, liquid should emerge from the interface. The surfaces should have no grooves or notches and the asparagus spears should all be the same thickness.

If you do not want to eat the asparagus on the same day of purchase, you can wrap the stick vegetables in a damp kitchen towel. The noble vegetables can be kept in the fridge for up to three days. If you want to keep asparagus for longer, you can freeze them unpeeled.

Some people wonder about the strong smell of urine after eating asparagus. “Asparagusic acid is contained in the asparagus. In the body, this is broken down by enzymes. This digestive process creates sulfur-containing compounds that are responsible for the smell and are excreted in urine. ” (sb)
